Fiesta Lemongrass Small Heart Bowl
Ingredients:
2 tablespoons oil
1 onion, chipped
6-8 mini sweet peppers, chopped
1 tablespoon minced garlic
3 tablespoons corn starch
4 cups of low sodium chicken broth
2 cups cooked chicken breast, shredded
3/4 cup cheddar cheese, shredded
1/2 cup cheese sauce
2 10 oz cans mild Rotel
1/2 lime, juice only
3/4 teaspoon ground cumin
1/2 teaspoon ground cayenne pepper
1/2 teaspoon oregano
3/4 teaspoon salt
a pinch of chopped cilantro
tortilla strips or chips for topping
Directions:
- Heat oil on medium heat in a large pot
- Sauté peppers and onions until soft
- Add in garlic and sauté until fragrant
- Dissolve corn starch in chicken broth and then add to pot
- Add chicken, lime juice, Rotel, and seasonings
- Increase heat to medium-high, add both cheeses, and store frequently until cheese is melted
- When soup starts to bubble, turn the heat down to simmer and let cook for 20 minutes, stirring occasionally
- Using an immersion blender, purée 1/2 of soup for a smoother texture
- Top with lots of tortilla strips (or chips) and enjoy!
