Foundry Chili Bowl
Ingredients:
2 cooked chicken breasts, shredded
1/2 cup onion, finely chopped
1 cup carrots, chopped
1 cup celery chopped
5 garlic cloves, minced
2 tablespoons butter
2 tablespoons olive oil
A pinch of salt and pepper
1/3 cup flour
4 cups low-sodium chicken out
1 1/2 cup half and half
1lb potato gnocchi
10oz frozen chopped spinach
1/2oz fresh basil
Directions:
- Melt butter and oil in a deep pan or large pot
- On medium heat, sauté onions, carrots and celery until carrots are tender
- Season with salt and pepper, and then add garlic, stirring until garlic is fragrant
- Add in flour and mix in the vegetables until it starts to dissolve
- Pour in chicken broth and half and half while stirring continuously
- Add in shredded chicken, gnocchi, and frozen spinach.
- Cook for 10-15 minutes, stirring every few minutes
- Stir in basil, take off of heat, and cover with lid until ready to serve
- Top with parmesan if desired
